Position: Chef de Partie – Mediterranean Cuisine (Cold Section) Location: Dubai, UAE Salary: AED 5,000 – 5,500 per month Benefits: Service charge & gratuities | Duty meal | Medical insurance | Annual flight allowance | Live-out arrangement About the Opportunity A leading high end beachfront dining destination in Dubai is seeking a passionate and experienced Chef de Partie specialising in Mediterranean cuisine – Cold Section. This is a dynamic opportunity to join a refined culinary team delivering high-end, ingredient-driven dishes in a vibrant, guest-focused environment. Key Responsibilities Oversee the preparation and presentation of cold Mediterranean dishes, including salads, appetisers, and specialty items. Ensure consistent quality, portioning, and hygiene standards according to brand and HACCP guidelines. Collaborate with the Sous Chef and Executive Chef to maintain a seasonal, creative cold section menu. Train and guide Commis Chefs and other junior staff in cold kitchen techniques and mise-en-place. Monitor stock levels and requisitions to ensure optimal inventory control. Maintain cleanliness and organisation in the cold kitchen section at all times. Participate in regular kitchen meetings and contribute ideas for menu enhancement and operational efficiency. Requirements Qualifications & Skills Minimum 3 years’ experience in a CDP role, with a strong background in Mediterranean cuisine, particularly cold section. Minimum 3 years' experience in a fine dining or upmarket restaurant environment Formal culinary training or certification is preferred. Excellent knife skills and understanding of cold preparation techniques, plating, and preservation methods. Familiarity with Dubai’s hospitality standards and food safety regulations. Ability to work efficiently in a high-pressure, fast-paced kitchen. Strong team spirit, reliability, and a proactive attitude toward culinary excellence.
